El Volcano tiene mas usos a parte del de la adminstración de una droga o fármaco, y el de la ambientación y aromatización de espacios :volcan2: , también lo podemos utilizar para cocinar.  :2ok: Arzak lo ha ha llamado Volcán de aromas. ¿cómo se habrá enterado de la existencia de este cacharro? :silb: :risa:

Cocina molecular

Técnica de aromatización

La función del vaporizador VOLCANO es la cuidadosa preparación de delicadas fragancias y aromas sin liberar saborizantes amargos o no deseados. La amplia gama de temperatura del vaporizador VOLCANO posibilita al usuario ajustar la temperatura específica, para generar un aroma por medio de este método controlado de forma exacta.
Aromatización de alimentos

El método de vaporización más conocido en la cocina es el mejoramiento de alimentos con aromas, las cuales son producidas por el vaporizador VOLCANO. Un excelente ejemplo de un plato mejorado con una aroma pura es la carne de cangrejo aromatizada con tomillo. El alimento se coloca en una bolsa para asar y ésta a su vez se llena con el aroma pura. Durante la cuidadosa cocción en el horno la carne de cangrejo se impregna del aroma de tomillo.
Presentación apetitosa de los platos –
Campana para platos

El aroma se puede generar con el VOLCANO y concentrar p.ej. bajo una campana para platos. Cuando los platos se sirven a la mesa se levanta la campana y se libera el aroma. Los vapores aromáticos que se producen se utilizan en la cocina moderna para estimular el sabor e inspirar el sentido del gusto del connaisseur.

La almohadilla de aromas

Esta técnica se utiliza para crear una aroma en el espacio mientras el invitado disfruta la comida. La idea es liberar lentamente aromas que rodeen al connaisseur durante la comida. El vaporizador VOLCANO se utiliza para llenar una bolsa para asar, la cual sirve como dispensador de aromas. Cuando la almohadilla está llena, la bolsa se cierra herméticamente para almacenar los vapores. Antes de servir la comida, la bolsa se provee con una funda y se pincha varias veces con una aguja. La almohadilla se posiciona debajo del plato y se sirve en la mesa. El aroma se distribuye lentamente durante la comida y crea un ambiente aromático. Grant Achatz describe esta técnica en su libro "Alinea" y utiliza flores de lavanda para sus almohadillas.

voy a poner por aquí un plato de cocina sencillote y barato que cualquiera puede probar, utilizando la técnica de Arzak de la aromatización de alimentos.

Solomillo de cerdo al vapor de hierbas

Ingredientes:
Solomillo de cerdo
Patata
Tomillo
Romero
Sal
Ajo
Pimiento rojo
Cebolleta
Nata líquida
Ron
Aceite de oliva virgen extra

Elaboración:
Partir unas rodajas del solomillo de cerdo

Poner a calentar el volcano, yo lo puse en potencia 7 para probar:

Coger las hierbas (romero y tomillo en mi caso), triturarlas un poco y meterlas a la cazoleta del volcano:

Se puede ir calentando el horno a la vez (yo lo puse a unos 140ºC) y mientras vas llenando la bolsa del volcano con el vapor del tomillo y el romero:

Una vez llena la bolsa con el vapor meto rápido los solomillitos de cerdo en la bolsa y la cierro. Ahora está listo para meterlo al horno muy pocos minutos (depende de lo gordo que se hayan partido los trozos de solomillo se necesita mas tiempo o menos):

Por otro lado vamos a hacer la guarnición que acompañe al solomillo. Troceamos unas patatas y las cocemos con una pizca de sal y un poco de ajo triturado (incluso se le puede echar algún diente de ajo mientras se cuece para darle un toque de ajo a la patata):

Sacamos las patatas de la olla y las metemos en la bandeja del horno, se le echa un chorrito de aceite de oliva por encima de las patatas y se pone el grill en el horno para que se dore la capa exterior de la patata, se les va dando la vuelta a los trozos de patata para que quede toda la patata dorada, quedando algo crujiente la capa exterior de la patata y blandita por dentro.

Y por otro lado vamos a hacer la salsa que acompaña el plato. Picamos un poco de cebolleta y de pimiento rojo y lo sofreímos en la sartén con una cucharita de aceite de oliva:

Cuando casi este sofrito le añadimos un chorrito de ron (a mi me gusta echar brugal que le da un toque dulcecito muy bueno), dejamos que evapore el alcohol y reduzca un poco el líquido, quedando un poquito caramelizada la cebolleta y el pimiento:

Después le añadimos un poco de nata líquida, lo dejamos un par de minutos en la sartén y lo sacamos para triturarlo con la batidora. Si después de triturarlo se quiere que quede muy fina la salsa se pasa por un colador (yo no lo hice):

Para finalizar lo colocamos todo en un plato y presentamos, en el centro los solomillitos rodeado de las patatas y adornado con la salsa de pimiento rojo y cebolleta:

Podemos acompañar este plato (ración) con una cervecita rubia belga trapense, por ejemplo una Chimay Cinq Cents que contiene un 8% de alcohol.

Increible el Arzak tirando de vapo pa aromatizar platos, interesante articulo , pues hasta ahora creia que solo valia pa fumar .


Mi mujer es restauradora  a ver si la convezco pa pillarnos un vapo, mira tu a lo tonto quizas me ayudes a convercerla  con este post.


TOmo nota de las recetas , ya me toi calentando , ¿ que vapo es el mejor ? :weed3:  me tan dando ganas de pillarme uno .Me has puesto los dientes largos con el solomillo y el romero  :idea:

Yo hace mucho q no cocino con el volcano, ya va siendo hora :vaps:

Hay varios vapos muy buenos, diferentes estilos, no sabria decirte solo 1. De todas formas si kieres un vaporizador para cocinar reduciria las posibilidades a 2 como mucho: el arizer y el volcano, pero cuenta q el volcano es mas caro y mejor. :volcan2:

qué bueno!!

a ver cuando triplemaría se atreve con vapores cannábicos y recetitas. Habrá que probarlo. No veas qué pinta tienen los solomillitos al vapor de tomillo. Por lo que comentas el invento funciona.

Y comentar sobre el otro cocinero que utiliza el volcano: Grant Achatz, q utiliza la almohadilla de aroma, una pekeña bolsa llena de vapor sobre la que pone un plato y va emanando el vapor poco a poco mientras el comensal come y a la vez inhala esos vapores.

Last week, the Vapor Experts caught up with pastry chef Francisco Migoya in his kitchen at the Apple Pie Bakery Cafe (http://www.ciachef.edu/restaurants/apbc/) on the Culinary Institute of America’s Hyde Park, NY campus. Our visit was quite a treat…

The  Vapor Experts love chefs who use vaporizers in cutting edge recipes, and Chef Migoya is no exception. With the advent of molecular gastronomy, the culinary world has become increasingly open to new avenues of creation.  When we heard about Chef Migoya’s latest move to infuse his Maple Bacon  Candy Bar with cinnamon via our beloved Volcano Vaporizer, we knew we  needed to see–and taste–it for ourselves.

Migoya was inspired to incorporate the Volcano Vaporizer by a recent project of his in the Apple Pie Bakery Cafe’s kitchen. He was seeking a way to integrate all the elements of breakfast into one bar by combining a slice of brioche,  maple-vanilla ganache, bacon-caramel praline, and 66% dark chocolate. Chef Migoya was close to achieving his goal of uniting all the flavors of a classic  breakfast delight. Yet, something was still missing. Migoya needed a  unifying element to tie all of his breakfast flavors together. At first  he considered another kitchen classic: coffee. Instead, he opted for the  enticing, exotic aromas of Vietnamese cinnamon. According to Migoya,  “it is the power of the aroma that makes my breakfast bar complete. It  is the unifying element.”

Chef  Migoya provided us with a demo of his vaporization process in the  kitchen. First, he finely ground Vietnamese cinnamon to maximize the  spice’s surface area and achieve the full potency potential of the cinnamon aromatics. Using the Volcano Vaporizer, Migoya heated up the ground cinnamon, and soon an intense cinnamon aroma filled the kitchen.

Attached  to Migoya’s Volcano Easy Valve Filling Chamber was the food safe Volcano Vaporizer Mixology Attachment. He attached the system to the loaded filling chamber and filled the  breakfast bar’s package with the strong cinnamon vapor. According to Migoya, once  sealed, the bar will stay fresh for weeks and the cinnamon aroma will  slowly penetrate the chocolate over time. Whoever is lucky enough to  open the bag will be greeted by the glorious scent of cinnamon and an  intense breakfast flavor unlike any experienced before.

 Migoya sees vaporization techniques being used more and more in the kitchen. He thinks that the mixology accessory needs to be better explained and demonstrated so that chefs understand the benefits of such a tool: that’s what we’re hoping to do here. Migoya says you can use it for anything be it lavender (there are fields of fresh lavender growing just outside the doors of the kitchen), or rosemary. He says strong, briny herbs are particularly vapor-ready as they contain potent aromatics. If you’re looking for a more subtle flavor, try citrus, rose, or chamomile.

A few months ago Migoya was giving a demonstration in Texas. He presented two versions of the same dessert, only there was one integral difference–the use of the vaporizer. He infused one dessert with a cocoa bean aroma and left the other one alone. Upon tasting the two versions his audience was duped: everyone thought they were two totally different desserts due to the power of the aroma produced from the vaporization techniques. Y me falta por comentar otro uso del volcano en la cocina, para la mixologia. Si alguno no conoce el termino dejo por aki algo de informacion:

Comentar 2 errores q le veo al asunto, tanto al pastelero como a la mixologa. Utilizan un tubo directamente de silicona para hacer llegar el vapor donde kieren. Yo esto ya lo probe y el tubo de silicona en contacto directo con el acero caliente me dio la impresion q dejaba sabor, mejor si lo enlazaran con una pieza de cristal, q tambien he hecho pruebas y no deja ese sabor q note.

Pero el mayor error q veo, sobre todo a la mixologa, es q ponen una temperatura elevadisima. El pastelero utiliza los 202ºC para vaporizar canela, yo creo q con 185-190ºC podria ir bien, pero tampoco pasa nada por meterle 202ºC.

Lo q veo una flipada es lo q hace la mixologa de ponerlo al maximo a 230ºC (446ºF), q asi consigue un vapor mas visible, sí, la presentacion es algo importante en la cocina (sobre todo en la cocina moderna), pero el sabor de ese vapor sera peor, demasiado tostado me da la impresion. Aunq todo sera probarlo, y esto es asekible, asi q algun dia tendre q ponerme a hacer coctails.

Creo que una utilidad podría ser la de aromatizar líquidos sin transferir color. Una vez filtre el vapor del herbalaire con un tarro de cristal y un tapón de corcho. El vapor estuvo bien, pero deje de hacerlo por lo aparatosos del invento. El tema está en que no pude resistir la tentación de probar un poquitín del agua, jamás se me ocurriría hacerlo de un bong, por el pestazo, pero la transparencia de esa agua y su aroma me empujó a ello. Descubrí que todo el sabor de la hierba estaba ahí concentrado en un líquido prácticamente transparente. Además era un sabor fresco, no "cocido" como las infusiones.

Se me ocurren un montón de ideas que pienso poner en práctica un día de esos:

-Gelificar en daditos  agua aromatizada con albahaca i servirla con agua fría de tomate o gazpacho clarificado.

-Aromatizar ginebras con  especies usadas en su elaboración

-Hacer la típica  leche de marihuana pero "aromatizando", está por ver si el thc se adhiere a la grasa de la leche mediante el filtrado de vapor, me temo que le faltará temperatura a la leche; pero sería un puntazo si se consiguiera sin degradar el thc por exceso de calor.

Hace mucho que no le doy uso en la cocina, pero sí que me gustaría probar un mojito con la hierbabuena vaporizada, seguro que tiene su punto.

¿Cuántas cargas metiste al agua antes de probarla? ¿1? Estás dando buenas ideas :2ok:

A mí unos colegas me mostraron otro uso diferente en la cocina, yo no lo había visto en internet. A ver si se pasan y nos lo cuentan, estaría guapo grabarlo en vídeo.

Como mucho dos pasadas a la carga, entiendo que a más pasadas o a más temperatura, más variaciones de sabor se van a obtener, llegando a ser incluso desagradable.

Otra idea, aromatizar el agua con la que sa vaya a hacer panes o pastas.

Estoy deseando ver esos usos que le dan tus colegas, nos adelantas algo? :pocima:

Estoy de acuerdo, o también darle al agua las dos primeras pasadas de dos cargas diferentes para potenciar mejor el sabor. Todo es ir probando.
